    Default More on Egg Omlettes

Here is a recipe I borrowed from many places and added some of my bits and pieces:

    Ingredients:
    1. 3/4 cup of thinly diced onions
    2. 1/4 cup of thin sliced tomatoes (radial slices)
    3. 1/4 cup of thinly diced green or red bell pepper (capsicum)
    4. 1 tea spoon of finely diced mint leaves
    5. 6 eggs
    6. 1 medium sized green chilly cut cylindrically in thin slices
    7. 1/2 tea spoon of cumin seeds (jeera)
    8. 1 teaspoon of low fat oil
    9. salt to taste
    10. thinly diced coriander (dhania) for garnishing
    Preparation:
    1. On a non-stick pan heat the oil
    2. Fry the cumin seeds till they are just about fried
    3. Add sliced onion and sliced bell pepper and fry till onion is brown
    4. Add sliced mint and sliced chilly
    5. Add salt to taste and fry on low flame till well done
    6. Mash the eggs. If you want fluffy omlette use a hand mixer or blender to mix.
    7. Spread the fried stuff on the pan evenly so that no lumps are formed. We want a nice flat omlette without lumps
    8. Pour the mashed eggs on top
    9. Cover the pan
    10. Cook on low flame for 3 or 4 minutes or till you get a nice omlette
    11. Garnish with coriander leaves
    12. Serve hot

There are just so many ways of cooking omelette's, the cooking method is the same but the ingredients and the timing of ingredients are different!

Its always good to try different kinds of omelette's.

Oops. I forgot all about the tomatoes.

After step 8, lay the tomato slices on top of the poured mix.

I love omelettes--especially ones with veggies. In fact, an omelette is one of my favorite ways to eat more veggies . Thanks for the recipe. I'm also intrigued by the suggestion of using mint--I can't wait to try it.

Thanks for the recipe! I always cook omelettes during the week. They are quick yet hearty and nutritional. I also make them filled with asparagus and cheese or with diced tomatoes and peppers. Yum!

Some people do not like Mint in omlettes. I will suggest that you make a small portion with mint at first - try it and if you like it make mint as the standard ingradient.

You can either cook your vegetables first and add them to the egg mixture then fry the omelette, or you can cook the vegetables and then cook the omelette and put the veg on one side of the omelette and fold the omelette.

spanish omlette can also be called "vegetable omlette" as it has vegetables, spinach etc.. Its like a pie. You cannot eat full omlette . You cut pieces like you cut in a cake. It is very thick as well but delicious :thumbup1:

There is another genre of ***getarism specifically for those who are in between vegees and non veges----egg-e-tarians ; and who buy the actual non veg eggs any way. What we get in the market commonly are vegetable eggs( unfertilised egg).

No, Vegans don't eat eggs. They don't eat any animal products.
They don't even use any non-food animal products.

    Thanks, ShAdOwCoN.

    Few more tips:

    a) Make omlettes really fluffy by using a blender to beat the eggs.
    b) Use an OTG over to slow bake the omlette
    c) You can use a microwave also but set the power setting to 25% power only.

Adding half a tea spoon milk while beating the egg enhances the softness of omlettes
