Chhole-Kulche was my staple diet during my stay in Delhi... Man they are awesome... Ofcourse you can't eat Bhature everyday... Kulche is a nice substitute...
I make it sure that I eat chhole with parathas at home atleast once a week... Though I don't know how to prepare it! And the person who cooks at my home use pressure cooker... Even I'm searching for the solution to it so that it can remain moderately soft with a good mix of Masalas... I guess only a Punjabi girl knows the trick here... Counting on Preeti to respond!
No.. Pressure cooker spoils the taste or final product in most cases including rice... Its just a way to cook fast!

Correct in essentials but the results are entirely different.
a) When you pressure cook the chick peas, they get completely bloated with water. They become extremely soft.
b) These chole when cooked with masala and all, get further cooked.
c) Because the Chole are already brim up with water content, the masala does not enter into the chole. The whole preparation then appears bland.
When Chole are boiled with the masala and water, the masala enters the chole and this makes them tastier. The problem is, if the Chole are not soft enough after overnight (8 hrs) soaking, then you need to boil them for quite a while.
Pressure cooking is alright for stuff like rice, dal, etc. But there are times when the pressure cooker has to remain on the shelves.

J4K - when soaking the chole in water add a pinch of salt and just boil them if you do not want to pressure cook them. Or you can cook them in pressure cook for less than half the time then simply boil them.
I knew that you'll definitely come up with a solution...I'll ask my cook to prepare it ur way next time... Sounds like a winner!

Chhole Kulche.........totally irresistible. For me they only taste good when they are spicy and the kulche are soft.
I have to say these types of food, known as street food is really good and there is nothing better like it!
