    Default Chhole Kulche

    Inspired from the Fast Food thread, I decided to dedicate a personal thread to this delicious and easily findable Fast food item called CHHOLE KULCHE :drool:

    Well this is not the way I eat it, i normally get them in a bowl made up of dried leaves. Those who don't know, these are boil white channe/chhole, mixed with onion, tomoto, chutneys,green/red chilly, lemon:droolI m killing myself) enjoyed withe maida kulchas

    This is a good option if you are a Fast food lover. I have seen these days Kulcha's are getting replaced by Bun's. Now they just fill the Bun with chhole and it looks like a Chhole burger which also gives you a take away option.

    One of my fav fast foods. I have seen chole chat with alu tikki and chole chat with even samosas. I don't think I have met a person yet, who hates chole. With a great taste and a gravy to die for it is not surpring that we see chole being used in many different ways than just being chole bhature/kulcha.

    Right, but I preffer Kulchas over Bhature as they are not fried and my throat cant take much oily stuff, but as you said chhole with samosa/tikki rocks:rockon:

    wow.......i tooo love em.....!!!!!

    i usually ve it with kulchas.......n thy r jus sooo yummm.....!!!!! with a bit a lemon over it & onions n fried green chiily to go wid it..... though i am not much of a chilli fan but....dont mind it wid chole.....!!!!!

    its called chick peas ......

    prolly everyone wud ve their version of chole;s made......

    OK. A question. What is the correct way to prepare chhole (chick peas) before cooking?

    I let them soak for 8 hours but this does not always soften them enough and I do not prefer them pre-cooked in a pressure cooker. That makes them too soft and then the masala does not penetrate them (because they are already boated with water).

    ^ adding to what you said: You can add a couple of table spoons common household tea/chai to add extra bit of dark colour if you want. It makes the chole look a bit dark brownish than the default red colour and more satisfying overall. Most places in Delhi, especially ones which are available at Nathu's in CP add chai for the darker colour. They may not advertise it but it is the only way you can get dark colour to your chole.

    You can also add Coriander-Mint green chutney (a couple of t spoons) for that added flavour.

    Well it's hard to find Chole-Kulche here but you can get good tasty Chole-Bhature... Waise here in mumbai a famous Wada-Pav chain called "Jumbo King" always do experiment in Wada-Pav, Couple of day back i took Wada-Pav with Chole and it was yummy... He even stuff Paneer, Samosa, French Fries etc in Wada-Pav...

    Than it can't be called a 'vada' pav, can it?

    Good catch..It should be "He even stuff Paneer, Samosa, French Fries etc in Pav..."

    I have always seen my mom, soaking them in the night so that she can cook them in the morning. I even love them eating as it is without adding anything to it just a salt on the well boiled chhole.

    As gothic said, don't mix Chhole Kulche with Chhole Bathure.

    When i make chole, i kept them all night for soaking and while preparing i mesh some of them that'll make chole gravy more thicker and tasty too... Just try it..Also i add chicken masala in that ..

    Adding chicken masala depends on taste, I like it

    Yes, Here in jumbo king they name it "Chole Wada Pav".. Very Tasty

    as a matter for fact....u can make a salad .....with the boiled chickpeas....
    add some chopped onions, chopped corriander, chopped green chillies, salt & chat masala as per ur taste, n lemon juice. its yumm n heathly.....n it goes really well with drinks......

    also u can put it .....boiled rajma's as well!!! or mix em also....

    That's the same way they prepare it to eat with Kulchas, only Chutney is missing from this receipe

    My original question remains partly answered: How do you soak the Chole to make them soft? I do not wish to pressure cook them.

    I guess after soaking, Pressure cook is the only option to soften more...

    @ J4K,

    I have heard of adding a pinch of Baking Powder (Meetha Soda) in water while soaking them.

    now i m confsed.....how can u eat them without pressure cooking??? neva heard of it.....

    True connoseiurs will never pressure cook Chole, Brown grams, etc. They should be boiled with sufficient water. Pressure cooking makes them very soft and bland.
