Most health freaks will tell you - egg yolk is full of fat and LDL cholestrol. It is bad for the heart especially for people on the generous proportions, heart trouble, high cholestrol, etc.
Right? Well, yes mostly. But before you chuck out the egg yolk completely, also consider the following:
- Yolk contains 43% of the total egg protein as compared to 57% in egg white.
- It has very high content of minerals such as calcium, iron, phosphorus, zinc, copper, manganese, etc.
- All the vitamins in the egg are in the yolk part.
Consider the first fact. It is wrongly believed that all the protein is in the white. Yes. The egg white has 57% of the total protein of the egg. But the yolk is much smaller than the white and hence size per size, yolk contains more protein content.
And the last part on vitamins - yolk contains 100%. So discard the yolk and you are depriving yourself of some very good source of vitamins:
Vitamin A: White = 0 IU (0%); Yolk = 245 IU (100%)
Vitamin E: White = 0 mg (0%); Yolk = 0.684 mg (100%)
Vitamin D: White = 0 IU (0%); Yolk = 18.3 IU (100%)
Vitamin K: White = 0 IU (0%); Yolk = 0.119 IU (100%)
DHA and AA: White = 0 mg (0%); Yolk = 94 mg (100%)
But when it comes to the total fat content of the egg, the yolk is a whopping 99% source. But yolks contains some very important fatty acids and HDL. HDL is the good cholestrol and is desirable in the body.
So unless, your doctor has strictly advised you to keep off all fat sources, don't throw away the yolk.
