I know you are averse to artificial colours but without the tomato red colour, the sauce will not look apetizing enough. Buy good quality colour.
oh yeh u get oregano from Dominos! Thanks for reminding me! But then it means going to fattening fast food, something which im trying to avoid, but however next time will remember to keep those sachets!

i wud definately not add colour to food!!!!!
sometimes it matters on the tomatoes you use, some give the right colour and sometimes they don't. As my aunty says you get the desi tomatoes and other salad tomatoes! I think that salad tomatoes are better in colour, but apparently the desi tomatoes have better taste in cooking, but i havent really noticed it myself!

Its turned out to be quite good actually, although with the herbs it would have added that extra touch. I added a lot of garlic and onions for the taste instead. I didnt have any coloring, but it didnt look bad in colour.

I added carrots and green pepper in the sauce online with your suggestion of mushrooms!

You have to slice the garlic with a razor blade to get the
    authentic Italian flavor.

p.s I don't remember the movies where they did that. Leo to my rescue???

How to Slice, Mince and Crush Garlic > Start Cooking

    search for 'razor'

Apartment Therapy The Kitchn | The Celluloid Pantry: Garlic Prep and Goodfellas (1990)

ok now I remember it was in Goodfellas.

    from another website
'It is also possible to use a very sharp knife or razor blade to slice the garlic. Sliced garlic creates a light and wonderful flavor; the garlic almost complete dissolves. It is best used in sauces and with meat."

    from yet another website

"MYTH: The best way to prepare garlic for cooking is to slice it razor thin, as Paul Sorvino did in the famous jail dinner scene in Goodfellas.

    REALITY: Well, it depends.

If you want a rustic, pungent garlic flavor, which is appropriate for certain things, use a garlic press. The moment you squeeze the garlic through the press, the mashed pulp should go directly in the dish and serve it immediately. Don't let it sit out and start oxidizing or it will turn bitter.

If you're doing something delicate like turbot or flounder or string beans you want a mellower flavor. That's when you want to use a very sharp knife and slice the garlic as thin as possible.

By using the razor blade in Goodfellas, Sorvino's character was demonstrating a refined palette. Slicing razor thin protects the cellular structure and allows essential oils and aromatics to come out in the cooking while minimizing the amount of oxidation.
